Bikini

Yields 10 people

Ingredients for the Clementine Cordial (yields 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Premix (makes 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (see above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Instructions

For the Syrup: Place all the ingredients in a pan, bring to a simmer, mixing to dissolve. Then, take off the stove and leave to cool down fully. Transfer to a sealable bottle, seal and store chilled, where it will keep for about four weeks.

For the Cocktail Base: Combine the specified liquid ingredients into one big jug, leave to sit for 60 minutes, then filter it best through a fine cloth, to ensure it's perfectly clear.

To serve: Measure 85ml of your batch mix to a mixing glass containing ice, and stir lightly for about 60 seconds to cool it down. Strain into an chilled martini glass or a similar vessel, garnish with some cranberries and finish by giving it a light spray of mandarin oil over the drink.
